Steaming Our Tamales

Thawed uncooked tamales overnight in fridge, Steam on High for 40 minutes for full dozen (35 minutes for 1/2 dozen) paper and all, standing up. Keep checking water level every 20 minutes or so. You can't over steam my tamales but you can burn them if water evaporates.


Cooking uncooked Frozen Tamales, same as above, break apart, stand up in pot, steam 1 hour on high, remove from heat, let set 5 minutes to firm. 


Reheating cooked tamales re steam them about 20-30 minutes in steamer or just put one in baggie, zap in microwave for about 30seconds till warm. 

All tamales keep good in refrigerator for 5-7 days

Cooked they keep in freezer 6 months 

Uncooked they freeze for 1 year.
